Area decides the baking time, not volume

The instinct when swapping pans is to match the volume, and that is only half right. Volume tells you whether the batter will fit. What actually changes the bake is the base area, because area decides how deep the batter sits, and depth decides how long heat takes to reach the middle.

Two pans can hold exactly the same batter and behave completely differently. Spread it wide and shallow and it bakes fast, with a large top surface that sets early. Pour the same batter into something narrow and deep and the outside can be done long before the centre is cooked.

The 9-inch round and the 8-inch square are the useful coincidence here: both are about 64 square inches, so they swap for one another with no change to the recipe or the time. That is the only truly free substitution on the list.

The 9×13 question

A 9×13 is roughly twice the area of a single 8-inch round, which is why recipes so often offer it as the alternative to two layers. Two 8-inch rounds come to about 101 square inches against the 9×13's 117 — close enough that the batter sits a little deeper in the rounds and wants an extra five to ten minutes.

Adjusting time and temperature

Once you know the depth change, the adjustments follow from it:

  • Deeper batter — extend the time roughly in proportion to the depth increase, and start testing before you expect it to be ready.
  • More than about a quarter deeper — drop the oven by 15 °C (25 °F) as well. Otherwise the outside sets and browns while the centre is still liquid.
  • Shallower batter — start checking at around two-thirds of the original time. Thin cakes go from done to dry quickly.

Every one of those is a starting point, not a rule. Ovens differ by more than most people realise, and the moment you change the pan the original time stops being reliable anyway.

Test for doneness, not for time

The most reliable check is internal temperature: most cakes are done at around 96 to 99 °C (205 to 210 °F) in the centre. Failing that, a skewer with a few moist crumbs clinging to it is the traditional test and works well. A clean, dry skewer usually means you have gone slightly too far.

How full to fill

Two-thirds is the working rule, and it is what the capacities here assume. Beyond that the batter climbs the sides and spills over as it rises. Much below it and the cake is thin and dries out before it colours. If your batter would over-fill the pan, bake the surplus as cupcakes rather than forcing it in — the tool warns you when that is going to happen.

Real pans vary more than charts admit. Sloping sides, thick walls and rolled rims all change the true capacity. If you want to know for certain, fill yours with water a cup at a time and count.
